Ingredients

  • 3 medium sweet potatoes, peeled and cubed
  • 2 russet potatoes, peeled and cubed
  • 4 tbsp unsalted butter
  • ยฝ cup heavy cream (or milk for a lighter version)
  • 1 tbsp olive oil
  • 1 tbsp chopped fresh sage (or 1 tsp dried)
  • Salt and black pepper, to taste

Instructions

  1. Boil the potatoes: In a large pot, cover both kinds of potatoes with salted water. Bring to a boil and cook until tender (about 15โ€“20 minutes).
  2. Prepare the sage butter: While potatoes cook, heat olive oil and butter in a small skillet over medium heat. Add sage leaves and sautรฉ until fragrant, about 1 minute.
  3. Mash: Drain the potatoes well, then mash until smooth. Pour in the warm sage butter and mix gently.
  4. Add cream: Stir in cream, salt, and pepper until creamy and fluffy. Adjust texture by adding more cream if needed.
