Ingredients
- 3 medium sweet potatoes, peeled and cubed
- 2 russet potatoes, peeled and cubed
- 4 tbsp unsalted butter
- ยฝ cup heavy cream (or milk for a lighter version)
- 1 tbsp olive oil
- 1 tbsp chopped fresh sage (or 1 tsp dried)
- Salt and black pepper, to taste
Instructions
- Boil the potatoes: In a large pot, cover both kinds of potatoes with salted water. Bring to a boil and cook until tender (about 15โ20 minutes).
- Prepare the sage butter: While potatoes cook, heat olive oil and butter in a small skillet over medium heat. Add sage leaves and sautรฉ until fragrant, about 1 minute.
- Mash: Drain the potatoes well, then mash until smooth. Pour in the warm sage butter and mix gently.
- Add cream: Stir in cream, salt, and pepper until creamy and fluffy. Adjust texture by adding more cream if needed.
- Serve warm: Garnish with extra sage or a drizzle of browned butter for a festive touch.
