Yukai Rice Vinegar is a mild vinegar made from the product of rice fermentation. Its color ranges between white and pale gold. It is the only vinegar used in Japanese cuisine, with which numerous dishes like the popular sushi are seasoned. It is used in the preparation of the rice that accompanies the fish in the different forms of sushi that exist in Asian cuisine, and for salads. It has a subtle yet acidic flavor and is milder than other types of vinegar.
